Creamy Spinach Tomato Pasta Recipe
When I cook, I don’t normally have a set
recipe, rather, I adjust as I go along. I always recommend seeing recipes as a
guide rather than following it word for word (unless you’re baking!). Everyone have
different taste and preferences, it’s all about adjusting the seasoning to your
liking! This pasta is not only delicious but is vegetarian friendly making it
the perfect weeknight meal.
Creamy Spinach Tomato Pasta Recipe
Yields 4 servings

Ingredients:
·
2 tbsp. olive oil [£1.70/500ml]
·
3 cloves garlic, minced [£0.55/2pcs]
·
1 medium onion, finely diced [£0.67/3pcs]
·
6 fresh tomatoes, diced [£0.60/6pcs]
·
1-2 tsp. sugar
·
3 handfuls spinach leaves,
washed [£1.53/300g]
·
3-5 tbsp. cottage cheese [£0.64/300g]
·
400g spaghetti [£1.00/kg]
·
salt & black pepper to taste
Instructions:
1.
Heat 1 tbsp. of oil in a pan at
medium high heat. Add garlic and stir until slightly browned. Add the onions
and stir again.
2.
Add diced tomatoes when the
onions have softened. Let the tomatoes cook. It will liquidify but if looking
dry, add some water. Add sugar and 1 teaspoon of salt.
3.
Let the sauce simmer on medium
heat.
4.
Meanwhile boil a pot of salted
water for your pasta. Once boiling, add the spaghetti and cook based on package
instructions.
5.
Once the tomato sauce has
reduced, it’ll have a slight chunky texture similar to store bought salsa, add
the spinach leaves. Cook for a few minutes until wilted and sauce is more
reduced. Taste and add salt to taste (I add quite a bit more)
6.
Take it off the heat and stir
in the cottage cheese.
7.
Drain pasta before returning it
to the pot. Mix in the remaining tablespoon of oil and half of the sauce. Stir
until well combined.
