Chorizo & Mushroom Hash Recipe



A potato hash is a great way to use up any leftovers and there’s practically no limit to how you can dress it up. You can pile on meat such as bacon or sausages or be healthier and add vegetables like peppers or courgettes. Topped with an egg and you have a well-rounded dish! Here’s a recipe on how I like to make my version of potato hash. Enjoy!


Chorizo Potato Hash Recipe

 Yields 2 servings

Ingredients:

·      1-2 large potatoes, diced [£0.72/2pcs]
·      2-3 tbsp. vegetable oil
·      Chorizo, finely diced [£2/200g]
·      ½ large onion, finely sliced [£0.67/3pcs]
·      2 cloves garlic, minced [£0.55/2pcs]
·      4-6 mushrooms, finely diced [£1/250g]
·      2 Eggs [£0.93/6pcs]
·      Optional: ¼ tsp. paprika, cumin, thyme and chilli powder
·      Salt & black pepper to taste
·      Optional: Chives to garnish

Instructions:

1.     Put potatoes in an even layer on a microwavable plate. Cover with kitchen towel and heat on high for 2 minutes. You should be able to pierce a fork through it. If not, heat again for another minute. Set aside.
2.     Heat vegetable oil on a pan over medium high heat. When hot, put the chorizo in and cook until it’s slightly crispy, around 3-5 minutes. Remove chorizo from pan and set aside.
3.     With remaining oil in pan, cook garlic and onions until softened, 1-2 minutes, before adding the potatoes. Season with a generous pinch of salt and any spices if using.
4.     Lower heat to medium and cook for a few minutes until potatoes have browned slightly.
5.     Stir in the mushrooms and let it cook further until both mushrooms and potatoes are cooked and browned. Adjust seasoning if needed. Put chorizo back in the pan
6.     In another pan, heat oil and cook eggs based on your preferences (I made a sunny side up).

7.     Take both pans of the heat and plate. Garnish with black pepper and chives.
